(Chilled Beet Salsa)
Ingredients:
- π₯ 2 medium beets (boiled, peeled, and diced)
- π 1 ripe tomato, finely chopped
- π§ 1 small red onion, finely diced
- π« 1 small bell pepper (red or yellow for extra color), finely chopped
- πΏ 1 small bunch of fresh cilantro or parsley, chopped
- π Juice of 1 lime or lemon
- π§ 1 clove garlic, minced
- π§ Salt and pepper to taste
- πΆοΈ 1 small jalapeΓ±o or other mild chili, deseeded and finely chopped (optional for heat)
- π₯ 1 tbsp olive oil (optional, for extra richness)
