Pesto di limoni

Ingredients:

  • 2 organic lemons (zest and juice)
  • 50g pine nuts (or almonds for variation)
  • 50g grated Parmesan cheese
  • 1 small clove of garlic (optional, for a mild taste)
  • 100ml extra virgin olive oil
  • 10-15 fresh basil leaves
  • A pinch of salt and pepper
