  1. Prepare the Lemons:
    • Wash the lemons thoroughly and grate the zest (yellow part only).
    • Squeeze the juice and set it aside.
  2. Blend the Base:
    • In a food processor, combine pine nuts, garlic (if using), Parmesan cheese, and lemon zest.
  3. Add the Basil and Oil:
    • Add the fresh basil leaves and half of the lemon juice.
    • Slowly drizzle in the olive oil while blending until you achieve a creamy consistency.
  4. Season and Adjust:
    • Add salt and pepper to taste. Adjust the tanginess by adding more lemon juice if needed.
  5. Serve:
    • Use immediately on pasta, spread on bread, or as a dressing for salads and roasted vegetables.
