Crispy on the outside, soft on the inside, and packed with colorful vegetables and gooey cheese.
π Ingredients (for 4 servings)
- 200 g of all-purpose flour
- 2 large eggs
- 150 ml of milk
- 1 zucchini, grated
- 1 carrot, grated
- 1 bell pepper, finely chopped
- 100 g of grated Parmesan or Pecorino cheese
- 50 g of mozzarella, cubed
- 1 tsp baking powder
- Salt and pepper to taste
- Fresh herbs (basil or parsley), chopped
- Olive oil for frying
