Spezzatino di manzo:

Ingredients:

  • 1 kg (2.2 lbs) beef chuck or stew meat, cut into 2-3 inch cubes
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 garlic cloves, minced
  • 1-2 tbsp tomato paste
  • 1 cup dry red wine (optional, but recommended)
  • 1 can (400g) diced tomatoes
  • 1 cup beef broth (or more as needed)
  • 2 bay leaves
  • 1-2 sprigs of rosemary (or 1 tsp dried rosemary)
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)
