Ingredients:
- 1 kg (2.2 lbs) beef chuck or stew meat, cut into 2-3 inch cubes
- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 2 garlic cloves, minced
- 1-2 tbsp tomato paste
- 1 cup dry red wine (optional, but recommended)
- 1 can (400g) diced tomatoes
- 1 cup beef broth (or more as needed)
- 2 bay leaves
- 1-2 sprigs of rosemary (or 1 tsp dried rosemary)
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
