Pollo con pomodorini stufati e burrata

  1. Prepare the Chicken
Season the chicken breasts with salt and pepper on both sides.
  2. Cook the Chicken
    • Heat olive oil in a large skillet over medium heat.
    • Add the chicken breasts and cook for about 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
  3. Sauté Garlic and Tomatoes
    • In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
    • Add the halved cherry tomatoes, season with salt, pepper, and oregano, and stir well.
    • Let the tomatoes cook for 5-6 minutes, until they soften and begin to release their juices.
  4. Deglaze with Balsamic Vinegar
Add the balsamic vinegar to the skillet and stir, letting the tomatoes simmer and absorb the flavors for another 2 minutes.
  5. Serve
    • Place the chicken breasts back into the skillet with the tomatoes, spooning some of the juices over the chicken.
    • Tear the burrata into pieces and place it over the chicken and tomatoes.
    • Garnish with fresh basil leaves.
  6. Enjoy
Serve hot with crusty bread to mop up the delicious tomato sauce. Buon appetito!
