Instructions:

- Second rise: Shape the dough into a loaf or a round shape and place it on a baking sheet lined with parchment paper. Cover again and let it rise for 30 minutes.
- Preheat the oven: Preheat your oven to 220°C (425°F).
- Top with cheese: Once the dough has risen, brush the top with a little olive oil. Sprinkle the remaining mozzarella, Parmesan cheese, and minced garlic (if using) over the top. You can also add some fresh herbs like rosemary or thyme for extra flavor.
- Bake: Bake for 20-25 minutes or until the bread is golden brown and the cheese on top is bubbly and crispy.
