Padella con pasta e pollo

  1. Cook the Pasta:
    Boil a large pot of salted water. Add pasta and cook according to the package instructions. Drain and set aside.
  2. Cook the Chicken:
    Heat olive oil in a large pan over medium heat. Season the chicken strips with salt and pepper, and cook until golden and cooked through, about 6-8 minutes. Remove from the pan and set aside.
  3. Sauté the Vegetables:
    In the same pan, add the garlic, onion, and bell pepper. Sauté for 3-4 minutes until softened. Add the cherry tomatoes and cook for another 2 minutes until they begin to soften.
  4. Combine the Ingredients:
    Return the chicken to the pan, and add the chicken broth. Stir well to combine and bring to a simmer for 3-5 minutes, allowing the flavors to meld.
  5. Add the Pasta:
    Toss the cooked pasta into the pan with the chicken and vegetables. Stir in fresh basil and adjust seasoning with salt and pepper.
  6. Serve:
    Plate the pasta and chicken mixture, and top with grated Parmesan if desired.
