Ingredients:
- 300g pasta (short pasta like fusilli, penne, or rotini works best)
- 200g cherry tomatoes, halved
- 150g mozzarella balls (or bocconcini), cut in half
- 100g black or green olives, pitted and sliced
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- Fresh basil leaves, torn into pieces
- 2-3 tbsp extra virgin olive oil
- 1-2 tbsp balsamic vinegar (or red wine vinegar)
- Salt and pepper, to taste
- 1 tsp dried oregano (optional)
- Grated Parmesan cheese (optional)
