Insalata di pasta italiana

Ingredients:

  • 300g pasta (short pasta like fusilli, penne, or rotini works best)
  • 200g cherry tomatoes, halved
  • 150g mozzarella balls (or bocconcini), cut in half
  • 100g black or green olives, pitted and sliced
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • Fresh basil leaves, torn into pieces
  • 2-3 tbsp extra virgin olive oil
  • 1-2 tbsp balsamic vinegar (or red wine vinegar)
  • Salt and pepper, to taste
  • 1 tsp dried oregano (optional)
  • Grated Parmesan cheese (optional)
