Focacce con formaggio e patate

  1. Prepare the Dough:
    • In a large bowl, combine the warm water and yeast. Let it sit for 5-10 minutes until it becomes frothy.
    • Add flour, salt, and olive oil to the yeast mixture and mix until a dough forms.
    • Knead the dough on a floured surface for about 10 minutes or until smooth and elastic.
    • Place the dough back in the bowl, cover it with a damp cloth, and let it rise for 1-2 hours until it doubles in size.
  2. Prepare the Toppings:
    • While the dough is rising, slice the potatoes thinly (use a mandoline if you have one) and soak them in cold water to remove excess starch.
    • After about 30 minutes, drain and pat the potatoes dry with a paper towel.
  3. Assemble the Focaccia:
    • Preheat the oven to 220°C (428°F).
    • Grease a baking sheet or focaccia pan with olive oil.
    • Roll out the dough to fit the pan and place it on the baking sheet.
    • Use your fingers to press dimples into the dough.
    • Layer the mozzarella cheese evenly over the dough, followed by the sliced potatoes.
    • Brush the top with olive oil, sprinkle with salt, pepper, and chopped rosemary.
  4. Bake the Focaccia:
    • Bake in the preheated oven for 20-25 minutes or until the potatoes are golden and crispy and the cheese is melted.
    • Once done, remove from the oven and let it cool slightly before slicing.
