Corona di brioche

  1. Prepare the yeast: In a bowl, dissolve the yeast in warm milk and let it sit for 10 minutes.
  2. Mix dry ingredients: Combine flour, sugar, and salt in a mixing bowl.
  3. Form the dough: Add the milk-yeast mixture, eggs, and lemon zest to the dry ingredients and mix well. Gradually add the softened butter, kneading until the dough becomes smooth and elastic.
  4. Let the dough rise: Cover the dough and let it rise in a warm place for about 1-2 hours until it doubles in size.
  5. Shape the brioche: Divide the dough into small balls (or make one large one). Arrange the balls in a circle to form a crown shape on a baking sheet.
  6. Second rise: Let the formed crown rest for another hour.
  7. Brush and decorate: Brush the top of the brioche with egg yolk and sprinkle with sugar pearls or almonds.
  8. Bake: Preheat the oven to 180°C (350°F) and bake for 25-30 minutes until golden brown.
