- Preheat the Oven: Set your oven to 180°C (350°F). Grease a medium-sized casserole dish with butter or oil.
- Cook the Pancetta/Bacon: In a skillet over medium heat, cook the diced pancetta (or bacon) until crispy. Remove from the pan and set aside on a paper towel to drain any excess fat.
- Sauté the Onion: In the same skillet, sauté the chopped onion in the rendered bacon fat for about 3-4 minutes, until soft and golden. Remove from heat.
- Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, garlic powder, black pepper, and salt. Add in the sautéed onions and half of the shredded cheese. Stir well.
- Assemble the Casserole: Add the cooked bacon and pour the egg mixture into the prepared casserole dish. Sprinkle the remaining cheese on top.
- Bake: Place the casserole in the oven and bake for 25-30 minutes, or until the eggs are fully set and the top is golden and bubbly.
- Serve: Let the casserole cool for a few minutes, then slice and garnish with fresh parsley. Serve warm and enjoy!
