Ingredients:
- 1.5 kg (3.3 lbs) of beef (preferably chuck, brisket, or round)
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 large onion, thinly sliced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 3 cloves garlic, smashed
- 1 bottle (750ml) dry red wine (Chianti, Barolo, or Sangiovese)
- 1 sprig of rosemary
- 2-3 bay leaves
- 6-8 black peppercorns
- 1-2 tablespoons tomato paste
- Salt and freshly ground black pepper to taste
- Optional: 2 tablespoons of vinegar (balsamic or red wine)
