Arrosto Brasato All’italiana (Stracotto)

Ingredients:

  • 1.5 kg (3.3 lbs) of beef (preferably chuck, brisket, or round)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 large onion, thinly sliced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, smashed
  • 1 bottle (750ml) dry red wine (Chianti, Barolo, or Sangiovese)
  • 1 sprig of rosemary
  • 2-3 bay leaves
  • 6-8 black peppercorns
  • 1-2 tablespoons tomato paste
  • Salt and freshly ground black pepper to taste
  • Optional: 2 tablespoons of vinegar (balsamic or red wine)
